How To Get Reservation At “Ginza Sukibayashi Jiro Sushi” That is the Almost Too Popular Sushi Bar.
No one can deny that “Sukibayashi Jiro,” the luxury sushi restaurant in Ginza, Tokyo, is now the most famous sushi restaurant in the world. They provide genuine Edomae sushi using sophisticated ingredients and traditional techniques. As a result, they have received 3 stars in the Michelin Guide 8 years in a row. It is so good that it made Obama say, “it was the best sushi I’ve ever had in my entire life,” when he visited the restaurant with Abe, the Japanese prime minister.
Japanese food fanatics of course knew about “Sukibayashi Jiro” from long time ago. However, when the popular movie, “JIRO DREAMS OF SUSHI” came out in the United States, not just Japan but the whole world came to know about it.
Because of this movie, the restaurant is now extremely popular among tourists who say, “I want to eat sushi made by ‘that’ legendary Jiro I saw on the movie…!”

This is war! How to reserve a seat at “Sukibayashi Jiro”
“Sukibayashi Jiro” only accepts customers with reservations.
They only accept phone calls. No emails or letters are accepted when you make a reservation.
“Sukibayashi Jiro” starts taking reservations on the 1st of every month, so on that day their phones are always backed up. After many tries, you can make a reservation for a month later, if you’re lucky.
In other words, if you want to make a reservation for September 15th, you need to call on August 1st. If you miss this chance, by the next day, they’ll be completely full until the end of next month. So hard!
To make the matters worse, they only accept reservations in Japanese.
In short, there’s only one way to make a reservation at Jiro: Ask your Japanese speaking friend as soon as possible and have them call Jiro on the 1st day of the month a month before the day you want to go there.
It might be a good idea to ask your friend if they are Japanese or ask your host if you’re staying at a place through a service like Airbnb. However, even if you can’t reserve a seat after you ask for help, please chalk it up to bad luck. It is really that hard!
Is it really the “Jiro” who makes sushi for us?
Unfortunately, despite your hard work, there is no guarantee that it will be Jiro that who makes your sushi that day.

Japanese people usually like to take time and chat while they eat, but Edomae sushi is an exception. People in the Edo period were impatient, so they started to dip the sashimi into soy sauce in advance so that they can eat it as fast as possible. This is the difference between Edomae sushi and other sushi.
